There are some fields we use in enrolment rules that have a pre-defined list to choose from when setting up a user, such as language, but when we use it in the enrolment rules, we have a free type box to add the data. This can lead to error as the user can accidentally misspell a particular language and users can then see content they shouldn't. I would prefer to be able to choose from the pre-defined drop down menu in these instances.

If you are referring to custom fields with a predefined list to choose from, you can now access this feature when creating rules in the enrollment rules section while creating or editing a course. When you select the custom field, it will automatically present you with the option to choose from your predefined list. Please refer to the screenshot for further details.
