The list of labels you can use in templates is very restrictive. For example i would like to have a catagory for ILC courses, or any catagory I choose. Not just a load of prescribed ones I will never need.

You can find this enhancement by going to the Manage Template page, adding a new container, and selecting the ribbon. Then, click on "Ribbon Type" and choose "Custom Ribbon." From there, you can name the ribbon and select the courses to display, either by tags or categories.
