Ability to set the target date and expiration date for enrollments while enrolling multiple users/courses. This saves the administrator from having to go back into each enrollment to manually set these dates. For example, if the administrator is enrolling 30 learners in 10 courses, the administrator must edit 300 individual enrollments. It would be much easier to set those dates while enrolling the learners.
This is a feature that is NECESSARY. the assignment of due dates should be done at the assignment or enrollment level and not at a course level.
@Robert Szustakoski, I would like to add that adding an availability to a course would affect anyone (everyone) taking that particular course. But what if I want to enroll someone (say John) in a course with a due date of the end o this month and I also want to assign (say Peter) to complete this SAME course by the end of the following month.
It would be nice to be able to assign the same course to different individuals with their own due dates.

When configuring a course, you can set the Expiration and Due date based on a timeframe, then all learners enrolled in that course will have their enrollment come due or expire based on when they enroll into the course:

This is something that would be very useful in our organization as well. Touching each individual enrollment is extremely inefficient. We would also like to be able to do this for a curriculum as well.
