Currently, if you modify any Learning Objects in an Online Course or Curriculum, the Date Edited field does NOT get updated.
During an audit (such as ISO), it is very difficult to prove what Course version that a Learner has received, and it would be much easier if we could report on the Course's Date Edited field.
Example: On December 19th, I created a course ('Course Date' attached). On December 22nd, I deleted the Course's Video Lesson and replaced it with a newer Video Lesson. As you can see in the Course History (attached, which you can't print), the Dated Edited field does not change. I believe if you modify any of the learning content in a Course or Curriculum, the Date Edited field should reflect that.

I've noticed that when other things are changed like a Message, then the "date edited" will change. I also ran into the issue where I updated the actual course content and the "date edited" did not change. For auditing purposes, this does not help whatsoever. I hope this can get fixed soon!
We've questioned Absorb on this several times and we were told that "this is just how the system works". Thank you for creating the idea! I agree, ANY sort of edit of a course should update the "Date Edited" field and add it to the history of the course.
As a note, if you use the "Save as new version" you might have a little more success. Rather than seeing the edit date, you will have access to the version number, and within the course, there is the edit log where you can explain the changes and have the date tracking.
